WIAW: Week 10

Well, we are well underway in the Meatless March challenge! Mr. B is doing awesome and I’m super proud of him! Although there have been a few conversations about how great a juicy steak or some shrimp would be. ;) Oh and there was the night I had to break Mr. B’s heart and inform him that he couldn’t get crab rangoons. He has made it much longer than I give him credit for. (which he kindly reminds me of)

We tried some new things this week and discovered our favorite meatless dish to date! It’s a philly cheese’steak’ and is amazingly delicious! We enjoyed it so much we had it twice this week! We also have roasted green bean and asparagus to perfection! It was a tasty food week around here! So tasty, I’m going to share a recipe with you all!

I’m okay about my eats this week. Thursday was the worst day at work and I was w/ a client at the ER for over 3 hours. Which meant no lunch and that equaled lots of snacking. There was also some not needed snacking after dinner most nights. Oh well, there’s always room for improvement!

Now, I promised you a delicious recipe! I bring you the meal that has graced our menu twice this past week!

Philly Cheese’steak’ Filling
(adapted from LaaLoosh)
Serves: 4
Simply Filling (count for cheese +1)
WW PP: 3

Ingredients:

1/2 onion, sliced
2 cloves garlic, minced
2 large portabella mushrooms, sliced
1 green bell pepper, sliced
1 tablespoon flour
1/4 cup vegetable broth
1 tablespoon low sodium soy sauce
1/4 tsp black pepper
4 slices reduced fat provolone cheese (Sargento brand is great!)

Directions:

1) Spray a large skillet w/ olive oil spray (I use a mister) and heat to medium high heat. Add onion and garlic, cooking until slightly brown, about 5 minutes
2) Add mushrooms and green pepper, cook until tender, about 8 minutes
3) Sprinkle vegetables with flour, tossing to coat them
4) Mix in broth, soy sauce, and pepper, cook a few minutes more to thicken sauce
5) Turn off heat, add cheese slices, covering w/ lid to aid in melting the cheese

 You can have on a bun if you prefer (PointsPlus will be higher) or just eat it without one, which is what we did. I even added it to my scrambled eggs on Friday morning. It is super delicious and you don’t miss the meat at all!

Vegan jerky, heard of it? Ya, me either! I found it yesterday while discovering a local health foods store! We shall see if it’s any good!

Cheesecake Fruit Dip

 

Last weekend was my family Christmas with my dad’s side of the family. Ya, we’re a little late, but we were patiently awaiting the arrival of Lulu so we could celebrate with her. Unfortunately, there was some illness going around and they didn’t want to get the lil one sick, so she didn’t get to attend the big party. My mom, sister, and I went over to my cousin’s so we could give her squeezes though!

After our quick visit, we headed back to the party! If any of you guys know my family, you know we are a pretty fun bunch. It’s never a dull moment, that’s for sure! This year my immediate family decided to dress in ugly sweaters. No one else knew we were doing so, which was funny because my aunt started to actually compliment us on them. Lol. Mine was awesome with nutcrackers on it, complete with Christmas tree earrings!

Not only are we a fun group, we’re also a bit odd. ;) We do a gift exchange where the women buy a woman’s gift and the men buy a man’s. Then we do a game or drawing to see who gets whose gift. The woman buy different things like lotions and decorative things. I gave a mini-donut maker this year and received Juicy Couture perfume and coconut oil. Now the men tend to give alcohol, because who doesn’t love a good drink now and then? Lol. This year though, there were also odd weapons given. Mr. B received a machete (with a bottle of Jim Beam) and my brother received a blow gun. So, I guess we’re now prepared for the impending zombie apocalypse. ;)

I knew that a lot of the food options wouldn’t be the best for me and I wanted to bring something that I knew would be more Weight Watchers friendly. After some searching on the internet, I came across a couple of recipes for fruit dip. I thought fruit would be great and made two dips to go along with it. One being more PointsPlus friendly than the other. Here’s the recipe I made:

Brooke Not On A Diet: Cheesecake Fruit Dip

Cheesecake Fruit Dip
Makes appox. 2 cups
3 PP for 1/4 cup
(PointsPlus calculated using recipe builder on Weight Watchers)

Ingredients:

1 small box of sugar-free and fat-free cheesecake pudding mix
3/4 cup fat-free milk
1 8oz container of fat-free cool whip, thawed

Directions:

Mix your pudding mix with milk until completely incorporated. Then fold in your cool whip until all mixed well. Do not use a hand mixer because it will flatten the cool whip. I used a whisk. Refrigerate a few hours or over night. Serve with your favorite fruits!

This dip is simply delicious! I made fruit skewers with strawberries, pineapple, and grapes to go along with it. And also some apple slices. All the fruit worked well with the dip and tasted great. I’m sure you could use any pudding mix you wanted too. Maybe I’ll try chocolate next time to dip strawberries in! Yum!!

Another loss in the books! I feel really good about this! I’ve almost lost the weight that I gained the week in Colorado. It’s pretty crazy that it took me only 2 weeks to gain that weight, and almost a month and a half to lose it. I’m okay with it though. I know that once I lose it again this time, it won’t come back on! End. Of. Story.

So, remember last week when my mom and I made a little deal? She was to track 5 days and I was to get in some sort of activity for 5 days and if we did it, we get little gifts.

Well, guess who rocked it out?!

I DID!!

That’s right, Mrs. I’mReallyBadWithActivity got at least 30 minutes in for 5 days! It wasn’t nearly as bad or as tough as I thought it would be. Like maybe I could actually continue with this trend of working out! Now there’s a thought! Haha.

Most of my activity was walking, but man let me tell you, after not really working out all winter long (okay, not at all) I felt it! I’m still sort of feeling it.

Sunday and Monday were walks with B-Fry around town. It was nice and there was even a bit of running/racing. I hope that we can get in the routine of going for a nightly walk, it would be good for the both of us.

Tuesday I crossed off one of my March goals and went for a photog walk around one of the Quad Cities. It was great to be behind the lens and earning some Activity PointsPlus! I got some pretty cool pictures that I would love to share, but sadly my computer cord took a crap and I’m currently using B-Fry’s MacBook. And I haven’t installed my computer software on here yet because I’m not sure how to do so. I’m a PC girl, but may be converting to a Mac girl after using his computer lately. A co-worker of his is supposed to maybe have a spare cord which would be awesome because I have a lot of needed stuff on my laptop. So, fingerscrossed on that one! (wow, ramble much Brooke?)

Wednesday I painted our upstairs bathroom, which in my opinion should count as activity because I was up and down a ladder and did a lot of arm movement. It is now painted a pretty awesome red! But, I really didn’t feel like that was good enough activity for the day, so I pulled on the Wii Fit. 30 minutes later I had worked up a sweat and felt much better about my workout!

Thursday my sister and her boyfriend were in town. My sister and has been at me to take pictures of them ever since I got my DSLR. So, I met them and we walked around for over an hour taking pictures. It was a lot of fun and I can’t wait to share some of them with you all. I can’t tell you how much I love photography. It is one of those things that puts me totally at ease.

So there you have it, my 5 days of activity! It was great and I’m striving for it again this week. My mom and I are continuing our little deal. Now I just need to decide what I want for my gift. Hmm. Guess I better get to thinking!

I have this weekend off, which I’m excited about as always. Yesterday B-Fry and I celebrated 8 months together. So, we’ll be going out on a date night tonight. Not sure what is on the agenda, but it will be great as always. Oh, our parents finally met each other too. It went pretty well. My parents weren’t super embarrassing. Haha. And I survived it alone since B-Fry was out on the ice playing some hockey. I’m sure we’ll have both sets out for dinner soon enough.

Speaking of parents, my dad’s birthday is on Monday. To celebrate we’re having a little get together tomorrow night. I’m excited to hang with family! One thing I’m not excited about, the food choices. My dad’s a bass fisherman and recently bought a fish fryer, so that’s what is on the menu along with coleslaw and potato salad. EEK!! I’m going to work on bringing a side that will be on plan for me and watch my fish intake. I’m going to enjoy the fish though, it’s not something I have often. I’ll be sure to track because I’ve been doing awesome with it for two weeks now!

Like I said last week, being on plan feels awesome! If you’ve fallen off the wagon, hop back on. It’s a great view up here! :)
