Recipe Review: Meatloaf!

It’s no surprise that I love Hungry Girl. I have all of her cookbooks, subscribe to her emails, and follow her on Twitter. All her recipes have the Weight Watcher PointsPlus figured out too, which is awesome. I will admit that not all of her recipes are a win, but there have been many which are. Including this one!

B-Fry mentioned one week while I was menu planning that he would really like some meatloaf. I haven’t had meatloaf in AGES, so it sounded pretty good to me too. I automatically headed to my cookbooks to find a recipe and stumbled upon Hungry Girl’s Turkey and Veggie Meatloaf Minis. I thought it looked tasty and easy to make, so I decided to add it to the menu.

It’s super easy to make and crazy delicious! It now makes the list at least once a month. Ready to see how it’s done?

Turkey and Veggie Meatloaf

Not Pictured: Ketchup

Ingredients:

1 small onion
1/4 cup plus 3 tbsp. ketchup, divided
1 1/4 lbs. raw lean ground turkey
3 cups bagged dry broccoli cole slaw
1/2 cup fat-free liquid egg substitute
1/2 cup quick-cooking oats
2 tsp. garlic powder
1 tsp. salt

Directions: 

*Preheat oven to 350 degrees

*Chop up the onion and broccoli slaw

*Put all ingredients into a mixing bowl

*Dig in and combine all the ingredients. I suggest using your hands! :)

 *Put the mixture into a 9×9 pan that has been sprayed with a non-stick spray. Top with a little more ketchup and cook in the oven for 45 minutes. (Hungry Girl’s recipe calls for you to cook them in 9 muffin cups, but I don’t have a muffin tin, so I do it this way)


*Serve it up with your favorite sides, I suggest mashed potatoes for sure! And dig in! :)

Rambling

Warning: This post will have no rhyme or reason. But it will include a yummy recipe!

Life is going to be pretty crazy this week, so I thought I would get a post in quick while I have the time to do so! We’re finally moving into the duplex this weekend. We should have a functioning shower by then. If not, the river isn’t too far away! haha.

I’m in no way ready to move, I’m a total procrastinater when it comes to this type of stuff. I guess I better get a move on it though since I really don’t have that much time to goof around. Eh, maybe I’ll pack tomorrow. ;)

I am ready to move though in the emotional sense of it. Living with B-Fry is going to be pretty great and will save us a lot of money because we won’t be driving back and forth to each other’s houses. It will be more structured in the sense that we won’t have to decide whose house we’re going to or where we’re going to eat dinner.

One downfall is I have to get rid of Atticus, my awesome black cat. I’m still searching for a home for him, so if anyone wants this cute face, let me know. I don’t want to have to take him to a shelter if I don’t have to.

Will You Take Me Home?

On top of moving, we’re also trying to get ready for Colorado. January 28th (B-Fry’s birthday) will be here before we know it. I haven’t been on a vacation since I was in high school, so this is something sort of new to me. I’ve been making lists like crazy. I now have a list for clothes, all my toiletries, and even a list of what to pack to entertain me for the 14 hour car ride. I’m sure I’ll rewrite these lists at least 5 times to make sure I’m not forgetting anything. I’m quite excited to get away though. I’m in definite need of a break from work and Iowa.

So maybe you all know, but then again maybe you don’t, I dabble in photography. I’d eventually like to make a career of it, but for now it’s a hobby. I’ve done most of my shooting with my film SLR and my little digital point and shoot. I have been pining after a DSLR for the last few years, but have never been able to afford one.

So, when my parents told me that I would be getting one for Christmas, I was ecstatic! I didn’t get it on Christmas, but they promised me I would get it before I left for Colorado. Well on Sunday my dream came true!!

I spent almost everyday after Christmas searching for the camera I wanted. Read all the debates about Canon vs. Nikon and read every review on every site possible. I decided I wanted a Canon Rebel with 15MPs for $649 on Amazon. My budget for my camera was $500 from my parents, so I was going to have to pay a little out of pocket to get what I wanted. I was okay with that.

Well, I ended up doing a search on Sam’s Club’s website and found a Canon Rebel XS 1000D with two lenses and a super nice camera bag for $600. The downfall was that it was only 10MPs, but was willing to take the MP cut for the extra lens.

Sunday B-Fry and I headed to Sam’s Club to see if they had it in store. They did and had ONE left! So, this to me was a sign that it was the camera I needed. :) My mom paid for it and we went to pick it up at the camera counter. When we get there, the lady informs me that I would be getting the display. Um, what? No one mentioned that to me! She promised me that there was nothing wrong with the display, because it had never been turned on. I informed her that I would only take the display if I could get it at a discount. She called her manager and they ended up giving me 30% off! So my $600 camera was only $430!! Talk about a deal!

I’m in total love with it! It will be awesome to have in Colorado!! :)

Looking for a yummy treat that’s super easy to make, portion controlled, and low in points?

Well thank Hungry Girl for this one!

Microwave Cake

1 Tablespoon fat free vanilla yogurt
2 Tablespoons devil’s food cake mix

Mix the two ingredients up very well in a microwaveable bowl. Pop in the microwave for 1 minute, then let it cool for a couple more. Then dig in!

You can also top it with some fat free caramel syrup, chocolate syrup, cool whip, strawberries, and all sorts of other things you can think of.

It’s delicious and about 3p+.
