I love baking and I love cookies. Usually this means baking something that isn’t always the best (loaded with sugar and flour) for me or Mr. B and having that type of stuff around the house isn’t usually a good thing. Cookies for breakfast? SURE!
Well, I found a recipe that I won’t feel so bad about eating for breakfast! In fact, I encourage you to eat a couple of these Banana Bread Cookies for a quick on the go breakfast! They’re made with simple ingredients and you won’t feel guilty when you devour 2 of them right out of the oven. That SO did NOT happen here!
Banana Bread Cookies
Make 8-10 cookies
PP Value: 1PP (without add-ins)
1 cup Quick Oats (other oats don’t work as well)
2 VERY ripe bananas (brown spots are good!)
1/2 tsp cinnamon
Add-ins (optional and don’t add too many because the cookies won’t set)
* Chocolate chips
* Peanut butter chips
* Walnuts or Pecans
Preheat you oven to 350* F. Coat a baking sheet with non-stick spray (I use my oil mister). In a mixing bowl mash your bananas, quick oats, and cinnamon together until well combined. If you notice your mixture to still be a bit runny, add a handful more of oats.
Go ahead and add the other stuff if you’d like. I’d suggest no more than 1/4 cup of the add-ins total. But remember, you DON’T have to add anything! They’re great just plain!
With two tablespoons, form 8-10 cookies on your baking sheet. Put in the oven and bake for 15 minutes!
If they last longer than the day at your house, then keep them in an airtight container. They were still good 2 days later at the Not On A Diet household.
I had a couple for breakfast along with a yogurt and some fruit one day and found them to be filling. I mean, it is oats and banana. Which I consider Simply Filling in my world!
