Donut Muffins!

I love to bake and B-Fry’s birthday is tomorrow, so I searched around Pinterestย and came upon this recipe for donut muffins. Note, these are not healthy in any way whatsoever. Unless 1 cup of sugar became a PowerFood on Weight Watchers and no one informed me. ๐Ÿ˜‰

I thought I would share the recipe anyways because sometimes you just need to bake. And then quickly ship those baked goods off with your foxy fiance to take to work. (Pretty sure his co-workers love me because of this…lol)


(recipe adapted from Smashed Peas and Carrots)
Yield: 48 mini muffins

1 C Sugar
1/2 C Butter (melted)
1/2 tsp Nutmeg
1 C Milk
2 tsp Baking Powder
2 C Flour

Sugar Cinnamon Coating
1/2 C Butter (melted)
1 C Sugar
2 tsp Cinnamon

Preheat your oven to 375*.


1) Mix sugar, butter, and nutmeg until combined.
2) Add milk, baking powder, and flour until just combined.
3) Fill your greased mini muffin tin about 3/4 full
4) Bake 15-20 minutes.


In the meantime, melt your other butter in a bowl. Then combine the sugar and cinnamon in another. Once the muffins are done and cooled slightly, you dip the tops in butter, then cover the whole muffin with the sugar and cinnamon mixture. Set on a cooling rack and try not to devour them!

These were crazy delicious, the nutmeg really makes the muffin! I was proud of myself for only eating a total of 4 over 3 days! The secret is really sending them out of the house and only keeping a few to enjoy.

Fabulous Fitbloggin!

Fitbloggin’ was awesome, amazing, fabulous, spectacular, and all other great words you can think of. I learned so much and met so many amazing people. It really was nice to be around people who “get you”. People who understand blogging, what twitter hashtags are, the weight loss battle, and will giggle when someone says that “two fingers are enough.”

Fitbloggin’ was more than the swag too, although that was a nice bonus! I came home with some awesome stuff! Running shoes from New Balance, EA Active 2 for PS3, a scale from Eat Smart Scales that measures weight/body fat/body water/muscle/bone mass, a food scale from Eat Smart Scales, several workout DVDS, and other things I’m sure I’m forgetting. I even had to leave some stuff behind because I just didn’t have any where to pack it! Funny story about the box of Fiber One cereal….B-Fry tried to pass it off to a homeless guy….he turned it down. Guess he’s regular already! Haha. Thanks to all the Fitbloggin’ sponsors for hooking us up!

The weekend was a whirlwind of activities, hugs, pokens, laughs, pictures, knowledge, tears, and fun. It didn’t last long enough of course. I wish that all my Fitbloggin peeps lived within 10 minutes of me. That would be the best. ๐Ÿ™‚

I wouldn’t change much except that next time I’d be more willing to walk up to people I didn’t know and I would stay in the same hotel as the conference because it was a LOT of walking and I feel like I may have missed out on some quality time with people. The time I did spend with them was priceless though.

My major highlight for the weekend was meeting Shauna Reid. For those of you who live under a rock and don’t know who she is, she’s the author of The Amazing Adventures of Diet Girl. And she’s someone who really inspired me along my journey. I definitely have a girl crush on the lady! Haha. I met her Friday night at the social and gave her a big ol’ hug and demanded a picture. We chatted like friends and she introduced me to people which was awesome. Then, she went out to dinner with a bunch of us! Seriously made my life. Lol. I know that she’s just a girl who lost weight and wrote a book, but to me she’s so much more. She’s awesome!

Other highlights:

* Mrs. FatAss realizing who I was and then freaking out when I told her about mine and B-Fry’s engagement.

* Meeting Kenz and having her tell people that she looks up to me. ๐Ÿ™‚

* Kenz meeting B-Fry and finding it weird to actually call him by his name.

* Meeting Tracey, Kerri,ย Steve, Jack, Ryan, Tara, Britt, and countless other people. It’s so awesome to meet the people you’ve chatted with online for so long.

* Foodie’s and Paolo’s performances on Friday night.

* Learning SOOOO much during the Intuitive Eating Panel.

* Feeling inspired by everyone there

* Robby telling me my glasses were Lisa Loeb like and then breaking out into “Stay (I Missed You)

* Introducing B-Fry to some awesome people

* Getting the BEST hug from Tara

* Chatting with the bartender and hopefully inspiring her

* Winning an awesome scale from Eat Smart Scales

* Coming down the escalator several times and seeing B-Fry at the bottom waiting for me.

* Getting extra drink tickets with Kenz

* Meeting Emily who lives near me!!

* And about a million other things….

Have I mentioned it was an amazing weekend?

He Liked It, So He Put a Ring On It

I’m sure most of you heard by now via Twitter and Facebook,


I don’t even know where to begin with all the emotions I’ve been feeling. I’m beyond ecstatic and have had the biggest smile on my face since it happened. I’m finally going to be a Mrs! Eek! *happy dance*

I’m sure you’re all dying to know how it all went down, we’ve told the story a million times and I’m sure we’ll be telling it a million more. ๐Ÿ™‚

The day started off with me seeing B-Fry off to work and he told me that he was going to try to take a half day because there wasn’t going to be much going on in the office. I told him good luck with that and I’d see him around 4pm. (He seems to always be wanting to get outta there early, but it never works in his favor) I went off to bed and got up a couple of hours later.

Before I got into the shower B-Fry called to let me know that he was going to be home in an hour and to be ready that he was going to take me somewhere. I didn’t think anything of it and was pretty excited that he did get a half day and I’d be seeing him soon.

Well, turns out that he had actually gotten off work at 11:00 and met my parents for lunch. He wanted to be a proper gentleman and ask them. Too cute! My dad gave him a couple of fist bumps and told him to go for it. Haha. That’s my dad. ๐Ÿ™‚ B-Fry then went out to his grandparent’s house where he had taken the ring the night before because he didn’t trust himself to keep it a secret and would propose early. He then came home and picked me up.

All I was told that we were just going to go for a walk since it was nice out and to bring along my camera for pictures. We headed over to the Iowa side of the river to a place we used to frequent when I lived over there. I should have probably caught on at this point. Haha.

We get to the park and there’s a swing there that we call “our swing,” we’ve sat there on several occasions and have shared many great conversations. Well next to the swing there’s the bum sitting at a bench drinking some beer. B-Fry kept saying “Gosh is that bum ever going to leave?” and I told him it wasn’t a big deal, we could still sit at the swing. Well, we ended up walking around and taking some pictures before heading back to our swing. The bum was still there and now there was some guy taking pictures of his car. B-Fry again was like “They ever going to go?” I told him just to sit on the swing, who really cares if they’re there.

Ya…I’m still clueless….

Finally the bum leaves, but the guy is still taking pictures of his car and then a personal trainer and his trainee come up and start working out close to us. B-Fry became annoyed once again. After about 10 minutes everyone disappeared and it was just the two of us.

We were just sitting there swinging and chatting when he says out of nowhere, something to the fact of us spending the rest of our lives together. I told him ya, that it was going to be pretty freaking awesome. B-Fry then gets up off the swing and stands there for a second, I asked him what he was doing and he said “Nothing, just stretching.”

Then he gets on his knee and pulls out the ring box and says “Will you marry me?” I said yes and started crying. I covered him in kisses and asked him if he was going to put the ring on me. ย Of course he did and we sat on the swing with some pretty big smiles on our faces and I couldn’t stop kissing his cute face.

It was simple, sweet, and absolutely perfect. I wouldn’t have wanted it any other way. He really is the freaking best and makes me the happiest I have EVER been.

The night was filled with phone calls, dinner with his parents, and then home with some wine and red velvet cake. Again…perfect. ๐Ÿ™‚

Tonight we’ll do some real celebrating! We’re doing dinner with my family and then off to our favorite bar for drinks. It’ll be awesome. ๐Ÿ™‚

Now let the wedding planning begin! We haven’t set a date yet, but it will be sometime around this time next year. And yes, there will probably be a wedding blog. ๐Ÿ™‚
