April Challenge: Day 14(My Dream Day)

Today’s Prompt: My Dream Day. Describe your ideal day. How would you spend your time? Who would you spend it with? Have you had this day? If not – how could you make it happen?

My dream day is going to happen later this year. No, it isn’t my wedding day. It’s actually July 2nd, 2012, two days after my wedding. Why is this my dream day?

Well, this will be the first time that B-Fry (who won’t be B-Fry anymore :) and I will be alone as Mr. and Mrs. B. The wedding will be over, along with the wedding planning. There won’t be anyone telling us what should or shouldn’t happen with our wedding or stress over if we’re going to have everything done in time or not. There won’t be any more family or friends to entertain and it’ll be just us.

Us, hopefully on a plane landing in California for our honeymoon. Getting ready to enjoy a week of beaches, yummy seafood, and sightseeing. It’ll be Mr. and Mrs. B enjoying each other. :)

April Challenge: Day 13(My Top 10)

Today’s Prompt: 10 Things I Couldn’t Live Without. Write a list of the 10 things you need (or love) most.

We all know that I couldn’t live without people like B-Fry, my families, and friends. So, I’m not going to list those things. Instead I’m going to list the Top 10 health/fitness related things I couldn’t live without!

In no particular order….

1) My Camelbak water bottle. Well, actually it’s B-Fry’s and I’ve just taken it over (what his is mine, right?). Seriously though I usually drink two to three of these a day. And then I pee a LOT! Lol.

2) Oatmeal in general is a must have for me. But this stuff is AMAZING! It’s delicious at regular oatmeal. And delicious as an oatmeal pancake. Ever since I discovered this stuff, I have eaten it almost every single day. Mmm!

3) I love having salads for lunch. They’re low in PointPlus and can be filled with yumminess of all kinds! I do romaine, leftover taco meat, a few wonton strips, topped with FF French dressing. Or romaine topped with tuna, banana peppers, and FF Ranch dressing. Sometimes topped with chicken or red peppers or a combo of other things. They’re just so versatile!

4) Weight Watchers is part of the reason I have lost all of my weight. It is a great program and I absolutely recommend it to whomever I can. It helps me stay on track and I love getting ideas and feedback at my meetings. Cannot wait to lead a meeting someday!

5) I’m sure you all know by now how I love this DVD. Well, more like love/hate. I hated it because it would be so tough at times, but I absolutely love it because it gave me awesome results! I recommend this to beginners and elite athletes alike. It’s a great challenge and a great workout.

6) Music makes my world go round. I almost always workout to music, unless I’m needing to hear instructions from a workout DVD. I’ve been addicted to the Pop Fitness station on Pandora. Nothing like lifting weights to “I’m Sexy and I Know It!” I feel like music and make or break a workout. If I’m listening to pumped up music, I’m all about it. But when I slower song pops up, then I kinda lose my rockstar ability. Lol. I posted my top 5 favorite workout songs the other day, go check it out if you need some new tunes on your workout playlist.

7) I heart my bike. Sadly, Betty is out of commission and will probably soon be replaced. See, I rode her so much last summer (100 miles in July alone!), that she no longer has bearings in her front wheel. So, I called to file a claim again the warranty, and they’re giving me a check for the full cost of the bike. So, Betty will soon be upgraded. I’m lost without a bike, so it is definitely one of my needs!

8) Laughing Cow cheese is awesome. I love the swiss on top of Canadian bacon. The garlic & herb mixed in with my sweet potato. And the new cinnamon cream cheese atop apple slices. I haven’t met a wedge I didn’t like!

9) Tina’s Best Body Bootcamp has been nothing but amazing. The workouts every two weeks have been great and challenging. Tina also offers personalized online training, which I have considering signing up for after Bootcamp. Only two more weeks left!

10) I absolutely love my bandanas! They keep my bangs out of the way and sometimes helps the sweat stay out of my eyes. Plus, I look and feel like a badass when rocking one! :)

Sweating For The Dress!

Above is the picture I snapped after Best Body Bootcamp’s Workout C! I’m sporting my new tank top I won on Six Sister’s Stuff’s blog from Ruffles With Love! It’s a super comfy tank and I got to customize it! :) I’m of course sweating for the wedding dress, but not toooo much! Don’t wanna risk it being too big again! Lol

anyways, on to today’s prompt….

Today I looked in the mirror and admired myself. Things are changing drastically in my body now that I’ve been doing Bootcamp. Look at those biceps, they’re growing every week. I feel much stronger and it’s freaking awesome! I love how my waist is shrinking and taking form, how I can feel bones I never knew even existed. Lol. I was wondering what my ribcage and hip bones felt like. When I look in the mirror I see a girl who is quite beautiful, no matter what shape my hair or makeup may be in. My smile is great and I love the shape of my eyes.

When I look in the mirror I see a girl who has overcome things, has gotten stronger, and has learned not to live in the past. A girl who has done something that not many people can do, I have lost over 135lbs! I have lost a newborn giraffe…how freaking crazy is that?! I don’t even think I could lift a newborn giraffe, yet I carried all that extra weight for many years. I wish I would have known then what I know now. That cooking is great and fresh foods taste delicious. That dinner doesn’t have to come from a microwave. But I didn’t know that then, and I’m so glad I’ve learned it now. I would have hated to spend the next 25 years of my life heavy and miserable.

But life isn’t that way, I’m happy, healthy, and grateful everyday to be alive. When I look in the mirror I know I’m a rockstar who can conquer the anything!

Now on to the bonus recipe!!

I have the day off today and usually meet up with B-Fry for lunch. Well, things didn’t work out as planned and I was stuck making lunch at home. Well after some cupboard and refrigerator scanning, I came up with this:

This was super yummy and even more easy!

Chicken Bacon Ranch Quesadilla
Serves: 1

Ingredients:

2 Low-Carb Tortillas
2 tbsp Fat-Free Ranch Dressing
1 tbsp Bacon Crumbles (Like the kind by Oscar Mayer)
1/4 cup 2% Mild Cheddar Cheese
3 oz Cooked Chicken Breast, shredded

Directions:

Heat up a medium frying pan over medium high heat. Warm up chicken in microwave if it has been sitting in your fridge. Put 1 tbsp of ranch dressing on each tortilla and spread around. Sprinkle one tortilla with 1 tbsp bacon crumbles, half the cheese, and the chicken. Top chicken with the other tbsp of bacon crumbles and other half of cheese. Place in to pan sprayed with cooking spray. Top with the other tortilla, dressing side down. Heat until cheese is melted, flipping halfway through!

I must say, this was a tasty lunch! And will make its way to my plate again sometime!
