Meatless Monday: 3 Bean Veggie Chili

I want to start off this post by saying, my heart goes out to all of the lives lost and lives affected by the tragedy in Newtown. It is not fair that someone who didn’t know how to deal with what was going on in their life chose to deal with it like this. It isn’t fair that the children lost won’t get to experience all the ups and downs that are life, for their lives were only just beginning. It’s not fair that the families of those lost will no longer look at the time of year with joy, but sadness and anger about what happened to them and what was taken away. I send the town of Newtown happy thoughts and hugs during this time. <3

Here’s this week’s Meatless Monday recipe! It was super easy and tasty too! Although, next time I’d make some changes. I note these in the recipe!

Brooke: Not On A Diet's 3 Bean Veggie Chili

3 Bean Veggie Chili  (recipe adapted from HERE)
Serves: 8 (1 cup servings)
PP: 4PP (with one can of black beans) or 5PP (with 2 cans)
* Cheese and sour cream will also up the PP value!

Ingredients:

1 (14.5oz) can vegetable broth
1 cup chopped onion
2  jalapeño pepper chopped and seeded (could leave in some seeds for heat)
3 teaspoons chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
2 garlic cloves, minced
2 (15oz) cans no-salt-added black beans, rinsed and drained (next time I’d only do one can. It had A LOT of beans with the two)
2 (14.5oz) cans diced tomatoes, undrained
1 (15oz) can no-salt-added pinto beans, rinsed and drained
1 (15oz) can no-salt-added kidney beans, rinsed and drained

Directions:
Put all ingredients into a crockpot and cook on low for 8 hours. Serve topped with your favorite chili toppings!

This was a super simple recipe to throw together for Meatless Monday! I love crockpot meals!

What’s your favorite chili topping?
-I’m a cheese and sour cream fan and have been know to crumble up cornbread or even Fritos on top! Yum!

  • Woo hoo I’m still in second place!! This challenge has been so much fun. I have enjoyed meeting new friends on the facebook support page. I’m glad meatless Monday is here. I have such a great time thinking of things to put together. I think I will try this recipe. Thanks for posting this.

  • MMMMM this looks delish! I’m always on the lookout for new soup/chili recipes. 🙂
