I want to start off this post by saying, my heart goes out to all of the lives lost and lives affected by the tragedy in Newtown. It is not fair that someone who didn’t know how to deal with what was going on in their life chose to deal with it like this. It isn’t fair that the children lost won’t get to experience all the ups and downs that are life, for their lives were only just beginning. It’s not fair that the families of those lost will no longer look at the time of year with joy, but sadness and anger about what happened to them and what was taken away. I send the town of Newtown happy thoughts and hugs during this time. <3
Hi my Skinny Snowmeners! Welcome to week 4! We’re more than halfway through our challenge! Seems like I was just getting all the sign up emails! 🙂 Hope everyone is still going strong! Now is not the time to give up, especially since next week is Christmas and our final week of the challenge! Kinda sad it’s getting close to the end! But, we shall not dwell on that! Here’s this week’s Meatless Monday recipe! It was super easy and tasty too! Although, next time I’d make some changes. I note these in the recipe!
3 Bean Veggie Chili (recipe adapted from HERE)
Serves: 8 (1 cup servings)
PP: 4PP (with one can of black beans) or 5PP (with 2 cans)
* Cheese and sour cream will also up the PP value!
1 (14.5oz) can vegetable broth
1 cup chopped onion
2 jalapeño pepper chopped and seeded (could leave in some seeds for heat)
3 teaspoons chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
2 garlic cloves, minced
2 (15oz) cans no-salt-added black beans, rinsed and drained (next time I’d only do one can. It had A LOT of beans with the two)
2 (14.5oz) cans diced tomatoes, undrained
1 (15oz) can no-salt-added pinto beans, rinsed and drained
1 (15oz) can no-salt-added kidney beans, rinsed and drained
Put all ingredients into a crockpot and cook on low for 8 hours. Serve topped with your favorite chili toppings!
This was a super simple recipe to throw together for Meatless Monday! I love crockpot meals!

-I’m a cheese and sour cream fan and have been know to crumble up cornbread or even Fritos on top! Yum!
