Foodie Penpals Reveal: March

It’s Foodie Penpal Reveal day! Love this project! But first, how adorable is the house guest B-Fry and I have this weekend?!

She's scared to step all 4 feet into the office! Silly dog!

That’s Abby, the in-laws dog. We have her for a few days while they’re in Georgia. She’s a lil spoiled fluff ball, but she’s cute so I’ll let it slide. Plus seeing B-Fry holding the leash with her on the end of it is a pretty funny sight. ;)

This month my package came from Juile over at ROJ Running! She’s a lover of running and sent a pretty awesome box!

I’ve tried everything in this box except the eggplant spread. Which I just may take to my dad’s annual fish fry this weekend. Anyways…in this box included yummy fruit bars from World Market, Vanilla Bean Brulee chocolate (that I have surprisingly haven’t demolished…yet), some crackers, and what I have declared Sin In a Jar….

Say hello to Banana Chocolate Spread, Nutella’s more evil sibling! This stuff is crazy delicious, by the spoonful….on a bagel….on a finger. It’s also horrible for you. Lol. A serving of 2TB is 6PP! So needless to say I’ve been trying my best to stay out of this stuff. I think B-Fry will do a fine job of devouring it for me. :)

I also had the strawberry fruit bar. It’s all fruit, so the PP were low, and it reminded me a lot of a fruit roll up, just less processed tasting. I can’t wait to try the other two!

Recipe Creation: Skinny Chicken Enchiladas

So what happens when you don’t have an ingredient for a recipe you want to make? Well most people would run to the grocery store, but since the nearest one is a town over, I decided to do something else. I created my own recipe! Now this doesn’t happen all that often, at least not on this scale. I’m known for adding things here and there, but this one I came up with all on my own! :)

It started off with some a chicken breast seasoned with Adobo seasoning. If you haven’t tried that stuff, it’s pretty awesome!

Then you rummage through the cupboards and fridge and find some enchilada sauce, a can of soup, and some peppers!

You cook up your chicken, drain almost all the liquid out of the soup, cut up the peppers, add it all to the pan. Oh and don’t forget some of the enchilada sauce!

Mmm...

While this is cooking away, you warm up your tortillas and pour some more sauce in the bottom of a 9×9 baking dish!

Then it’s assembly time! Throw about 1/4 cup mix into the tortillas, roll them up, place them in the dish, then top with the rest of your sauce and some 2% Mexican cheese!

Bake @400*  until you can’t resist the smell! (or about 15 mins!)

Cheesy Goodness!

Dish out three of these bad boys and top with sour cream if you’d like!

Skinny Chicken Enchiladas
Serves: 2 (3 enchiladas)

Ingredients:

- 4oz chicken breast, cut up into bite sized pieces
- Adobo seasoning
- 1 Can of Progresso Light Southwestern Style Vegetable Soup, most of the liquid drained
- 1/4 cup bell peppers, chopped
- 6 (6inch) corn tortillas
- 1 package Frontera Enchilada Sauce (or about 1 1/2 cups canned sauce)
- 1/2 cup 2% Mexican shredded cheese

Directions:

1) Preheat oven to 400*
2) Bring a medium skillet up to medium-high heat and spray with cooking spray. Season chicken with Adobo seasoning, add to pan. Cook all the way through, about 5-6 minutes.
3) Add peppers, soup (drained), and about 1/8 cup of sauce, heat through
4) In the meantime, wrap your 6 tortillas in a damp paper towel and microwave them for about 30 seconds. Also add a few tablespoons of sauce to the bottom of a greased 9×9 pan.
5) Fill each tortilla with about 1/4 cup of the chicken mixture, and roll up. Place to fit into pan. Top with the rest of the enchilada sauce and 1/2 cup of cheese
6) Bake in the oven for 15mins or until the cheese is melted
7) Dish up and top with sour cream if you’d like!

These were quite yummy! And low in PointsPlus too compared to regular enchiladas! Only 8PP for 3 of the enchiladas! WIN!

This may have just sparked more creative recipes! :)

 

 

First Run In Ages

This morning I got up and finished the cupcakes I decided to bake at midnight. We’re having a cookout for my dad’s birthday today, and he loves jello cake. So being the awesome daughter I am, I baked him jello cupcakes. (They’re fairly healthy too, but we won’t tell his fast food loving self that. Hehe) I’ll be posting the recipe to them soon also!

Speaking of jello…that’s how my arms felt after I finished Workout C from Bootcamp this morning. I have now graduated to 8lb weights, which feel awesome! I love how much stronger Bootcamp is making me. My quads are freaking killer and I’m constantly flexing to check out my biceps. Ya, I’m a little obsessed, but you gotta remember muscle is something completely new to me!

Anyways, after Workout C I decided I was going to do some interval running. I have a HIIT app on my phone and set it up to do 2min running with 1:30min rest for 25mins. I put in my headphones and hit the pavement. I did a quick 3 minute warm-up, then the running began. About halfway through the first running interval, I thought “What if I just continued to run, forgetting the rest intervals?”

So that’s exactly what I did, I continued to run. I ran through the nagging shoulder pain, the annoying side stitch, and the tiny voice in my head telling me that I should stop. I ignored those pains and replaced that voice with “You got this,” “You can do it,” and “Just a bit further.” I kept telling myself to just make it to the stop sign, then the park, then the next block, and before I knew it I had run for 20mins straight! It wasn’t no epic speed, but I did it and that’s ALL that matters!

Ya, I Feel Awesome!

I cannot remember the last time I ran that long, I know it has been probably a year. I used to run often, but had issues with my IT band. This time around I’m being smart, lots of stretching and wearing a band under my knee to help.

I also am getting rid of the voices this time around that say “I can’t” and have changed them into, “I’ve got this.” Because we all know that the only thing stopping yourself….is yourself!

What if you did something today your mind said you couldn’t? What would you accomplish?
