Zero Excuses Challenge Weigh-In #4

Did you notice my header change? Thoughts? I’ve been trying to make things look better around here! Got any suggestions? I’m clueless when it comes to this stuff! Lol.

It’s that time again for another weigh-in!

Here are my stats:

Loss/Gain: +1.2 lbs
Total Loss: -6.2

Yes, I’m up again this week. But I’m not upset! The only day that was outta control was Thanksgiving. The rest of the week I was on plan and I kept up with my workouts. I even worked out the day I was TOTALLY not feeling it! So go me! I have noticed that my pushups are getting better, so I’m focusing on that this week instead of my gain. Because we all know this is much more than about a number on the scale! :)

My mom did awesome this week!

Loss/Gain: -1.5 lbs
Total Loss: -4.0

I saw her yesterday and she was certain she was going to gain. She’s had pumpkin pie in the house, which she of course didn’t let go to waste. Pretty sure it’s a crime in all 50 states to let pie go to waste! ;) But, she ended up losing! Way to go Mama B! :)

In other news, I got a haircut last week! This is my first “real” haircut since January before we went to Colorado. It was getting SUPER long and was “getting out of control” according to B-Fry. Lol. So, last Tuesday I was squeezed in for a haircut by my awesome cousin Whit! She ROCKS!!

I’m loving it! It’s always nice to make a change! And I didn’t cut too much off because I need long hair for the wedding!! :) (Which that really deserves an update of its own! Things are CRAZY!!! in wedding planning land!)

This weekend B-Fry and I are heading to St. Louis for a Blackhawks game. I’m pretty pumped! I’ve really become a fan of hockey and this will be my first NHL game. This also means I’m going to be in the same room as Patrick Sharp. He’s such a good player. Hehe. (Don’t worry B-Fry, you’re still the hottest hockey player EVER! :) )

It’s going to be fun and nice to get out of town for a night. My plan is to eat well on the road and jump in and out of my seat as much as possible to get some activity in! I’m also going to keep up with my workouts while still at home, not taking any breaks since I won’t be getting activity in on Sunday. I will workout Saturday before we leave though. No gain for this chick next week!

Turduck…what?

Hi everyone! Hope you all survived your turkey comas and Black Friday madness!

I did! It was the pie making the night before Thanksgiving that almost did me in. Ever had to clean pecan pie filling out of an oven? Well I did and let’s just say burnt sugar doesn’t smell yummy or come off easily.

B-Fry decided to make a pecan pie he saw Pioneer Woman making on Food Network. While taking  the pie out to remove the foil, spillage happened. Luckily the pie was salvageable and the smell of burnt sugar went away after a bit.

After clean up and the longest cooking time ever! I moved on to making my pumpkin cheesecake. I saw this recipe on Pinterest and new I had to make it! I love pumpkin (who doesn’t) and I LOVE cheesecake! Luckily, there was no spillage of this deliciousness!

Next day was Thanksgiving! I had to work a few hours in the morning, but once home it was snuggle in bed and watch the Macy’s Parade time. (Well I watched, B-Fry slept) Oh and then Disney had Beauty and the Beast on! So, I of course had to watch that!

In the afternoon we headed to B-Fry’s grandparent’s house for dinner. B-Fry has had an obsession with eating a turducken since we started dating. Last year it didn’t happen, so he was pretty determined to get one this year. For those of you who don’t know what a turducken is, it is a turkey stuffed with a chicken and duck. Sound pretty crazy, doesn’t it? Crazy delicious, that is! :)

After 11+ hours of cooking (thanks Grandma for getting up so early to cook it!), we had us a turducken!

After all the other goodies were ready, it was time to eat! I of course had a little bit of everything, including this yummy sweet potato orzo that my future MIL made.

Dinner was AWESOME! B-Fry’s grandma said what she was thankful for this year was that Zach had brought a lovely lady into the family. :) It was sweet. Stories of the past were told and everyone raved about the turducken, while guessing which part they were eating. We all thought we had gotten a piece of duck, but soon found out we were wrong.

We sat around watching some TV in our turducken comas and letting dinner settle. But not too long, because we were all dying to try some pie! Pecan pie and pumpkin cheesecake were on the list!

Now, I’m not a pecan pie fan, until now that is! I only had a bite, but it was amazing! The cream sauce on top was to die for to! I probably just could eat that plain! Lol. Everyone else was a fan of B-Fry’s handy work too! And he was quite glad that it turned out despite the pain it was the night before.

It isn’t Thanksgiving to me until I get some pumpkin! But, I didn’t want a boring ol’ pumpkin pie. This was a great swap! I must say I was quite impressed with my baking skills too! This was my first time cooking cheesecake and I was worried it wouldn’t be done, but it turned out fantastic! My mouth is currently watering just thinking about it.

After dessert, B-Fry was slicing the other half of the turducken, when he came across a very dark piece of meat. It wasn’t turkey and it wasn’t chicken. It was the duck! We thought that the meat would be throughout the turkey, but we were mistaken. We discovered that the turkey was actually stuffed with a chicken breast on one side and a duck breast on the other!

We all got a good laugh out of that and had a little piece of duck, which was delicious! We got our leftovers packed away and headed home. B-Fry indulged in some more pie later and took a nap before heading out to get some Black Friday deals.

We headed to Target to get a tree, but soon turned around when we saw the line wrapping clear around the back of the building. We decided no $30 tree was worth that! We ended up going out later on Friday and getting our tree anyway!

Zero Excuses Weigh In #3 (And A Recipe!)

Well this week wasn’t as great as the previous week. I didn’t work out as much and I indulged in a bottle a glass of wine.

My damages this week:

Loss/Gain: +.6 lbs
Total Loss: -7.4

I figured I would either not lose or gain a bit this week. Especially since I had a huge loss last week. And consumed wine and pizza this weekend. I’m not upset about it, I still made awesome choices this past week. Instead of 3-4 slices of pizza I had s side salad and only 2 small slices. So go me!

My plan this week is to continue working out and not go bat shit crazy on Turkey Day!

Speaking of Turkey Day, my mom has been busy with getting ready to head outta town and dropping her dog off at our house. So she totally forgot yo weigh I’m this week. Guess I’ll let it slide! :)

I’m still loving the scale! It’s great how it gives you the total lost since starting! Such an awesome feature.

Now on to a delicious recipe!

If you ‘Like’ me on Facebook, then you might have seen my post raving about a new recipe B-Fry and I tried. I promised the recipe last week, but life happens. So here it is this week!

Thai Burgers and Peanut Sauce 
(adapted from here)

Burgers:

1/2 cup finely chopped green onions
1 Tbsp chile paste w/ garlic
2 tsp grated ginger
2 tsp soy sauce
1/4 tsp salt
1 pound ground turkey

Mix all these ingredients together and form 4 patties. Cook in a skillet over medium high heat until cooked throughly.

They should look a bit like this:

While the burgers are cooking, mix up your peanut sauce

Sauce:

2 Tbsp creamy peanut butter
2 tsp soy sauce
1 1/2 tsp sesame oil
1 tsp water
1 tsp rice vinegar
1 garlic clove, minced

I threw all of this into my Magic Bullet until well blended. I then popped it in the microwave for just a few seconds to warm it up and make it melty. Don’t do it too long or you’ll burn the peanut butter!

Mine looked like this:

To go along with the burgers I whipped up an asian type slaw with some broccoli slaw and these two ingredients…

2 Tbsp dressing and about 1/4 Cup of the Asian Medley

Mixed it all together and got this yummy looking and tasting slaw:

And here’s the final product! B-Fry and I decided the burgers didn’t need buns. I thought they were great without all the bread! And the slaw was a great side to go with it. I loved them and so did B-Fry!!

Final Result

This will definitely be made in the future! It was a great combo and had the right amount of spice. My mouth is watering thinking about them!
